Abstract
U diplomskom radu analiziraju se specifičnosti u upravljanju lancem opskrbe voćem i povrćem. U radu su istraženi izazovi s kojima se suočavaju opskrbni lanci u prehrambenoj industriji s fokusom na lanac opskrbe tvrtke koja se bavi veleprodajom voća i povrća. U istraživačkom dijelu, studijom slučaja tvrtke proučavani su izazovi u ključnim segmentima promatranog opskrbnog lanca: proizvodnji, nabavi, prodaji, transportnoj logistici te skladištenju i upravljanju zalihama voća i povrća. Voće i povrće kao proizvod ima posebne zahtjeve s logističkog stajališta jer ima ograničen rok upotrebe, zahtjeva transport s temperaturnim režimom, ima osobinu sezonalnosti i niz ostalih specifičnosti. Zbog tih specifičnosti, pravilno upravljanje opskrbnim lancem postaje ključan faktor za uspješno poslovanje tvrtke u ovom sektoru. U posljednjem dijelu rada, ponuđena su potencijalna rješenja za izazove tijekom i izvan sezone i preporuke za unapređenje procesa koji se odvijaju unutar opskrbne mreže.
Abstract (english)
The thesis examines the specificities of managing the fruit and vegetable supply chain. The research focuses on the challenges faced by supply chains in the food industry, with a particular emphasis on the supply chain of a wholesale company dealing with fruits and vegetables. The empirical part of the study involves a case analysis of the company, investigating challenges in key segments of the observed supply chain, including production, procurement, sales, transportation logistics, as well as storage and inventory management of fruits and vegetables. Fruits and vegetables, as products, have specific logistical requirements due to their limited shelf life, temperature-controlled transportation needs, seasonality, and other unique characteristics. Consequently, effective supply chain management becomes a critical factor for successful operations in this sector. In the final section of the thesis, potential solutions for challenges during both peak and off-peak seasons are presented, along with recommendations for improving processes within the supply network.
